Pasta should be an interesting dish, even though we all know it´s origins are a characteristic mix of tomato, meat, and basil mixes, feel free to make up your own pasta dish. Today a very simple, fast, fun dish for lunch or dinner. At home or at work and easy take away option, vegan/vegetarian/healthy or however you might call it…it suits everyone!

Veggy Pesto Pasta2

Veggies Pesto Pasta (Serves 1 or 2)

Ingredientes

Pesto

Basil 1 Cup
Almonds (no shell) or Pine nuts 1/2 cup
Garlic 1/2 unit deveined
Olive oil 1/4 cup
Salt and Pepper To Taste

Veggie Pesto Pasta

Amount of pasta needed (1 portion for this recipe is about 40-50 grams crude)
Mushrooms 1 cup
Zucchini 1/3 cup
Pesto 2-3 tablespoons or to taste

Directions

1. Add al ingredients to a food processor and mix, if you like a more nutty pesto feel free to add more nuts.

Veggie Pesto Pasta

1. Cook the pasta as indicated on package.

2. On a pan cook the mushrooms and zucchini with a little bit of oil.

3. Add the pesto as they cook.

4. Once veggies are completely cooked mixed them with the pasta and serve.

5. Try it with a fresh salad. (Mine had mango, tomato, spinach and red cabbage, with a mango dressing) Veggy Pesto Pasta3

    Deberías poner nutritional information con las recetas

    • Hola Daniel!
      Algunas tienen descritas las propiedades nutricionales de algunos ingredientes. La verdad no somos partidarios de que la gente cuente calorías, pues la nutrición es mucho más básica y al mismo tiempo más compleja que esos números. Por eso cuando es de recalcar estipulamos las tablas. De resto todos son comidas saludable, balanceadas, y nutritivas dentro de un marco de hábitos saludables :)
