There’s so much joy in me when I get salads to taste like heaven, and yes I hate when they don’t taste at all! I always tell my patients to experiment, to try new things, to take risks with salads, because it is very easy to get tired of the same veggies over and over again. Today we are sharing a salad that came out by just mixing many things I had on hand, and of course by using a machine that bought a few months ago and I love, the Spiralizer. (not essential, just makes it more fun).

Vegan Salad (as much as you want)

Ingredients:

  • carrot
  • lettuce
  • hummus
  • quinoa
  • cucumber
  • avocado
  • tomato
  • tofu
  • almonds

Vinaigrette:

  • 1 medium avocado
  • 1 garlic clove
  • 7 basil leaves
  • 1/4 teaspoon salt
  • Juice of 1 lemon
  • 1/2 teaspoon white vinegar (or fruit)
  • Water for consistency

Directions:

1. Wash and chop all ingredients as desired.

2. For the carrot I used the Spiralizer

3. Prepare the vinaigrette by adding all ingredients in a food processor. Add water to achieve the consistency you like .
