So as I said several times, vegan cuisine is all about the flavor you can create with natural ingredients, because if we don’t experiment lets admit it, it can be quite boring. So I came up with this tofu mayo today after looking for a vegan mayo recipe. It’s extremely easy, and a great way to taste tofu in a different way, and not the traditional “steak” or dices.

Tofu Mayo (Makes 360 grams, or 1 1/2 cups aprox)


1/2 cup almond pulp (the one left from making almond milk)
1 cup of tofu
1/3 cup of soy milk unsweetened
1 tbsp of vegetable broth
2 Baked and mashed garlics (recipe here)
1 parsley stem
1/2 tsp salt
2 tsp dijon mustard


1. Add all ingredients in a food processor and mix.

2. Enjoy as a mayo or dipping sauce in anything you like. I will bring you soon a recipe of seitan sandwich using this mayo :)
