Sometimes having a nutritional lunch can be pretty hectic, we never have time, it’s always on the go, or the options are just too limited, and never healthy. Remember that eating healthy AND delicious should never be a headache, but instead fun and easy. That’s why today we are sharing a pretty simple idea that you can pack the night before and just put it all together at lunch time :)

Oh plus you’ll have your veggie portion covered :)

Super Beet Sandwich (serves as many as you want)

Ingredients

I’m not putting a specific list of ingredients, I will share with you what I used in this sandwich but remember, put all the veggies you enjoy, make sure you get a nutritional boost out of it.

  • Tomato
  • Spinach
  • Grilled Tofu
  • Cucumber
  • Grilled
  • Eggplant
  • Avocado
  • Red onion
  • Cabbage
  • Beet Dip (made at home check out the recipe)

 

Off-course I won’t miss out the bread, I love to buy fresh local bread, whole wheat and full of seeds :)

Directions:

So the idea goes like this. Nobody likes to eat a wet messy sandwich, but still that’s not an excuse to eat crappy food outside the office. I bought a Lock n’ Lock container that has divisions (you will find any brand at supermarkets), you get all you veggies and protein ready, the day before, put them according to it’s consistency and dryness on different compartments. The bread can be put in foil paper. Pack a knife if you need to, just in case you need to spread the dip or cut anything else. Pull out your container and make up your delicious sandwich in a minute, believe me, you’ll have more than one wishing they have cooked at home :)

You can replace tofu, for turkey ham, chicken or anything you really enjoy. Remember sandwiches and wraps should not be an excuse to avoid you daily veggie needs. Let us all know how it goes if you take it to work!
