“I can’t eat pasta, it makes me fat!” This is a very common affirmation I get around from people. The truth is, pasta doesn’t make anyone fat, it’s the portion of whatever meal you eat, doesn’t matter if it’s pasta or whole grain bread. Portion control and replacing ingredients when preparing is the key to a healthy eating.

My invitation is to stop being afraid of pasta! It won’t make you fat if you have healthy habits, instead you will be delighted by tasting different preparations like this one. We came up with a pesto sauce where the main ingredient is spinach, plus healthy fats, and replaced the typical oil with nuts. Not that olive oil is bad, we just wanted something fresh and new. Try it, you will be amazed on how good it makes your paste :)

Spinach Pesto (Serves about 2 cups)

5 cups of spinach leaves (or handfuls)
1 cup of basil leaves
1 cup pine nuts
1 cup water, more if necessary
2 garlic cloves
1 tsp salt
1 tsp black pepper
juice from 1 lemon


1. Put all the ingredients in a food processor and blend. Make sure the nuts are processed finely and that you add enough water for a smooth mix. Feel free to add more of any ingredient if you like a stronger taste.
