Caprese! a very common entree or salad found at restaurants. I do have to say I was always a caprese fan when I used to eat cheese as part of the vegetarian diet, yet moving onto veganism was quiet a step in which you never imagine how many things on this earth have cheese, until you take it out. So caprese was no more of a friend, and until today we discovered a type of caprese sandwich, where nuts and avocado come in place to replace cheese in the most exotic and delicious matter.

A very fast sandwich you can put together in 5 minutes if you leave the nut “cheese” prepared ahead of time.

Caprese Vegan Sandwich (Serves 3 or more)

Italian Herb Tomato

3-4 organic tomatoes, sliced into half-moons
1/4 cup sliced onion
1/2 tsp oregano
1 Tbsp extra virgin olive oil
Juice from 1 lemon
Pinch of salt and pepper
1 Tbsp basil fresh or dried

Nut “cheese”

1 cup of cashews
1/8 tsp black pepper
1/8 tsp salt
2 tbsp extra virgin olive oil
1/3 cups plain soy milk

Sandwich

Bread of your choice, preferably whole wheat or with nuts
Avocado (as much as you like)
Lettuce (as much as you like)
Basil (as much as you like)

Directions:

1. First prepare the Italian Herb Tomato so that you have a very flavorful mix. Cut the tomato and add the remaining ingredients in a bowl, mix properly. Let aside while you prepare the rest so you get a very nice mix.

2. In a food processor add all the ingredients to prepare de nut “cheese”, if you have a very thick texture feel free to add more soy milk.

3. Toast the bread and place the nut “cheese” first, then the tomato, then the avocado and last the greens.

4. Serve and enjoy a very nice lunch or dinner, whit the sensation of cheese, but with a way healthier preparation!
