This recipe was something I never thought it could taste so good! When I first saw it, what caught my attention was its color but I never imagined what the main ingredient was. Beets! A beet dip ….. I know, you first thought might not be that good, but I can promise you that you will love it! Even more prepare it and do not tell anyone what it is, just make them taste it…you`ll be surprised by everyones faces they will love it too! Use it as a dip with bread sticks, crackers, wraps or normal bread, including sandwiches to replace common sauces, and even salads. This dip I cooked for the first time for last month’s issue of Alo Magazine here are some pictures and off course the recipe!
1 cup cashews
¾ cup cooked chickpeas or cannellini beans (can be canned if you’re in a hurry)
½ cup raw beets, peeled and chopped
2 tablespoons agave syrup (or honey)
1 tablespoon fruit vinegar
Salt and pepper to taste
Add all ingredients in a food processor and blend until it becomes a consistent dip. If too thick you can add a little water.
