The Andean Blueberry Jelly has always been one of my favorites. Since I left home and started living on my one I had never seen the fruit as such on the market, or perhaps it had never interested me, who knows. These days looking for blueberry  I found the andean blueberry and it came to me I could prepare this delicious jelly myself, which can be used as just jelly or as an ingredient for other recipes as the Andean Blueberry Oatmeal Treats.

Andean Blueberry Jelly


1 cup of andean blueberries
3/4 cup sugar


1. Simmer the andean blueberries without water on a pan for a minute or two so they release liquid.

2. Add to a food processor or blender and blend. If  you don’t like jelly with fruit in it feel free to strain it before putting it on the pot again.

3. On a pot place the andean blueberry blend and add the sugar. Place over low heat.

4. Keep mixing slowly for 3-4 minutes, until it has consistency of a jelly. Remove from heat and cool down.

5. Remember it’s a jelly or a dessert that mean control your portion! :) Enjoy!
